Now you can imagine how tasty it is......we make this as fry and curry also. curry name is gutti vankaya koora, which I love a lot in vegetarian curries and I will sure share the recipe with you.this is my mom's recipe ,mom cooks veg curries really well.....especially this gutti vankaya vepudu........you know? I will have 5 to 6 brinjals at a time :)
Recently I prepared this dish as side dish in lunch box for my kids they really like it.this time I want to share this recipe with you......you can have this with rasam rice,dal rice,sambar rice and paratha.
Ingredients :
Fresh brinjals : 1/2 kg
Dried /fresh chopped coconut : 1/4 cup
Peanuts : 1/4 cup
Sesame seeds : 1 table spoon
Ginger & garlic paste : 1/2 tspoon
Cinnamon : 1 inch stick
Cloves : 2
Red chilly powder : 1 tspoon
Turmeric powder : 1/2 tspoon
Coriander powder : 2 tspoon
Salt to taste
Oil : 1/3 cup
Preparation :
1)first roast peanuts till they changes into golden color switch off the flame and take peanuts into a bowl,in same pan add sesame seeds and saute for few seconds and take them into a bowl and keep a side.
2)blend coconut, cloves and cinnamon in to fine powder.
3)add roasted and peeled Peanuts ,sesame seeds blend into fine powder and add other ingredients into mixie jar (except oil) and blend them well (don't add water)
4)now take brinjals and make deep cross in each brinjal and drop them in big bowl of water
5)now take one brinjal and stuff some masala in it and press gently with hands and put in plate.....repeat the same process for other brinjals too.
6)heat oil in a pan place stuffed brinjals in pan evenly and cook on low flame for 5 minutes by covering the lid.
7)now after 5 minutes flip every brinjal and cook for another 5 minutes by covering the lid.
8)if there is leftover masala sprinkle on fried brinjals and saute gently for 2 minutes and switch off the flame.
9)now yummy, yummy gutti vankaya vepudu is ready to serve!!!!!!!
